Pitalito Especial is from the Huila Department in Colombia in the heart of the Colombian Andes. Small scale producers, under 3 hectares, ferment their coffee cherry for 24-36 hours before washing. The primary varieties from this region are Caturra, Bourbon, and Castillo. We're really enjoying how rich and balanced this coffee is, especially when brewed as espresso.
